Not only is hummus delicious, but it is also versatile and packed with nutrients. Hummus is a great source of plant-based protein and antioxidants - not only from the extra virgin olive oil, but also from the chickpeas and tahini, which are proven to have anti-inflammatory properties.
What you need
1 1/2 cups cooked chickpeas
1/4 cup fresh lemon juice
1/4 cup tahini
2 to 3 tablespoons water
1 garlic clove, chopped
1/2 teaspoon ground cumin
3 tablespoons Taralinga Estate Robusto extra virgin olive oil
What you do
- Mix the tahini, lemon juice and water in a blender for 1 minute.
- Add the EVOO, garlic, cumin and 1/2 teaspoon of salt and blend for 30 seconds.
- Gradually add the drained chickpeas and blend until thick and smooth.
- If too thick, extra water can be added.
Serve with an additional drizzle Taralinga Estate extra virgin olive oil and a dash of paprika. Store homemade hummus in an airtight container and refrigerate up to one week.
