One Bowl Zucchini Muffins

Makes 12

 

Ingredients

2 medium zucchinis, grated

1 large brown onion, grated

110g shredded cheese (cheddar or mozzarella)

150g self raising flour

120ml Taralinga Estate Extra Virgin Olive Oil

5 eggs

Salt and pepper, to taste

 

Method

  1. Preheat oven to 180°C and line a 12-hole muffin tray with paper cases.
  2. Combine all ingredients in a large bowl, then spoon into the prepared muffin tray. Bake for 30-35 minutes, or until golden.
  3. Allow the muffins to cool in the tray for a few minutes before transferring them to a wire rack to cool completely.
