Ingredients (salsa):
- 1 x Mango, finely diced
- 1 x red capsicum, finely diced
- 1 x small cucumber, finely diced
- ½ red onion, finely diced (optional)
- Jalapeños, diced (optional)
- Fresh herbs (i.e. coriander), chopped
- ¼ lime or lemon juiced
- Salt & pepper to season
Method:
Finely dice all ingredients and add to salad/ serving bowl. Season with salt/ pepper and herbs of choice.
Enjoy it as a side with cooked meat or seafood, in wraps or tacos, or as a refreshing summer salad.
